Ingredients
1 ½ cup all-purpose flour
¼ cup of cranberry juice
¼ cup of Oasis apple juice
½ cup of coconut sugar
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
¼ cup maple syrup
2 eggs
2 tablespoons of melted butter
¾ cup frozen cranberries, halved
½ cup walnuts, coarsely chopped
Butter or coconut oil to grease a loaf pan
Preparation
- Preheat the oven to 350 ° and grease a cake tin with butter or coconut oil.
- In a large bowl, combine the flour, coconut sugar, baking powder, baking soda and salt. Mix with a fork. In a medium mixing bowl, combine maple syrup, eggs, cranberry juice and melted butter. Add to dry ingredients until ingredients are combined. Stir in cranberries and walnuts.
- Add the dough to the prepared loaf pan and bake for 40 minutes.
