1 ½ cup all-purpose flour
¼ cup of cranberry juice
¼ cup of Oasis apple juice
½ cup of coconut sugar
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
¼ cup maple syrup
2 eggs
2 tablespoons of melted butter
¾ cup frozen cranberries, halved
½ cup walnuts, coarsely chopped
Butter or coconut oil to grease a loaf pan


  1. Preheat the oven to 350 ° and grease a cake tin with butter or coconut oil.
  2. In a large bowl, combine the flour, coconut sugar, baking powder, baking soda and salt. Mix with a fork. In a medium mixing bowl, combine maple syrup, eggs, cranberry juice and melted butter. Add to dry ingredients until ingredients are combined. Stir in cranberries and walnuts.
  3. Add the dough to the prepared loaf pan and bake for 40 minutes.
